Unusual, large white 3-4" round roots have deep green shoulders that fade to creamy white outside with a sunburst of intense watermelon red in the center. Delicious flesh is extremely mild, sweet with a hint of pepper and crispy. Early harvest of smaller roots provides best color and mildest flavor. Vigorous tops make harvesting easy. Excellent in salads, as a garnish, cooked, fermented or pickled. Very popular at gourmet restaurants and Fresh Markets.
